Shmoe's Sausage Casserole

On a very wet miserable bank holiday, this is the best dinner. It is also my bonfire night or Halloween favourite! As i write this I have one simmering away in the oven and the house smells Delicious :)

For 2 people....
4 Sausages (any type of good quality ones you like, including veggie)
a Large Onion
Yellow Pepper, cut into slices
6 Mushrooms, quartered
Beef stock Cube ( or vegetable if you are making a veggie version)
Glass of red wine
Garlic, 2 cloves copped
Tin of chopped tomatoes
1 tsp Smoked Paprika
Rosemary
1 tbls Olive Oil
1 tbls Tomato Concentrate

1. Thinly slice the onion and fry in the oil for about 2 mins
2, add the paprika and garlic and stir well
3, add the sausage and fry until browned on the outside (about 5 mins) keep the onions and garlic moving so they don't burn
4. lower heat and add wine and stock cube, mix well before adding a tin of tomatoes, a pinch of sugar, sprig or rosemary and tomato concentrate. Mix well, and higher the heat to bring to the boil.
5. Transfer to a casserole dish and stir in raw mushrooms and sliced pepper. Season with a touch of salt and a good helping of freshly ground pepper
4. Put in oven on 170 for 2 hours

You can serve with anything.... mash, rice, pulses, lentils, jacket potato, or if you are feeling a bit naughty, roast potatoes. Some nice green veg also goes down nice, steamed broccoli or peas.
